It's a good idea to give people familar food which they like to eat, rather than subject them to a menu of new and exotic foods.

Select foods that taste fresh and look appetizing even after sitting a while on a buffet table.

Serve hot appetizers only if the food can be kept hot or eaten immediately after heating.

Have plenty of chilled water on hand.

Place 'drop tables' for china & glassware, or trash cans for disposables
